Three Blue Ducks fly north to open Brisbane restaurant
Casual eatery and sustainability advocat, Three Blue Ducks, has announced that it is expanding with the opening of its first Queensland restaurant at W Brisbane in April this year.
Bringing to the hotel a passion for fresh, seasonal and local produce, the team's menu will showcase the best of Queensland and northern New South Wales ingredients.
"When approached by W Hotel to embark on a Three Blue Ducks venture in Brisbane, it was important to us to ensure that we shared the same values and sustainable business practices," says Jeff Bennett, co-owner Three Blue Ducks.
"We share the same ethos for quality and we’ll be using locally sourced produce that is farmed ethically.
"Although our current venues greatly differ in aesthetic, our philosophy and ethos remain very much the same and we can't wait to work alongside W Brisbane with views over the Brisbane River."
Three Blue Ducks Brisbane will take in water views as well as feature a wood fire oven, a rotisserie and charcoal pit and a cold seafood section.
The menu will feature all the classic, Three Blue Ducks dishes, including spanner crab scramble with green mango, bean shoot salad, house made siracha and cashews; coal roasted lamb; and the corn fritters with guacamole, fermented cabbage, jalapeno, herb salad, labneh and poached eggs.
"Brisbane is craving a venue like this - vibrant, honest, fresh and local with stellar views," says Haldon Philip, general manager of W Brisbane.
