Sydney’s Bar M to open new late-night Italian restaurant in the CBD

Chef Paola Toppi, the daughter of Giovanna Toppi who founded restaurant Machiavelli Ristorante in 1988, and her team from Sydney’s Bar M are opening a new late-night Italian restaurant in October.

 Toppi Martin Place will be split into a casual pasta bar, a cocktail bar and a formal dining room. In the former, pasta will be handmade in front of diners. The cocktail bar will offer snacks and antipasti alongside Bellinis, barrel-aged Negronis and a tiramisu Martini. 

The main dining room will offer a full menu of seafood, meat and fresh pasta, with a largely Italian wine list. 

“It feels like I’m going back to my roots, during what is an exciting and hopeful time for Sydney’s CBD,” Toppi said in a statement. “Operators are investing in the area again and we have the opportunity to bring back life and energy to our city. We’re really proud to return to the CBD, celebrating our family’s history in the area with a fresh and modern concept for the Sydney of today”.
