Ovolo Hotels announces new partnership with chef Justin North

Sydney-based chef, Justin North, is working closely with boutique hotel, Ovolo 1888 Darling Harbour, to help create the menu for its new Mediterranean-style wine bar and kitchen, Mister Percy.

With a focus on coastal European cuisine, Mister Percy will open in late-July and takes its name from Percy Ewart, a wool classer who worked at the former woolstore in which the hotel now resides.

North will work with Mister Percy head chef Luca Guiotto (ex-A Tavola, Catalina) and the Ovolo Hotels teams to create a showcase of Mediterranean flavours and Australian produce.

"We’re taking our guests on a journey with beautiful wine matched with Mediterranean-style pinchos showcasing the best local ingredients," he says.

"We’ve drawn on flavours from around the European coastline and it’s not surprising that it’s exactly what we like to eat and drink here."

The Mister Percy menu will include selection of pinchos and larger share-style dishes, as well as a grilled Port Lincoln sardine tart with tomato, black olive and basil; and chargrilled Clarence River baby octopus with local chorizo and pickled green chilli.

Overseeing the drinks program is consulting sommelier and author, Chris Morrison, and group wine curator Shun Eto (formerly of QT).

The wine list will focus on Mediterranean-style wines and varietals such as Jamsheed Rousanne from Beechworth and Nick Spencer ‘Dry Red’ Touriga-Shiraz blend from Gundagai, with many available by the glass.

Interior designers, Luchetti Krelle, will reimagine the harbour-side venue combining vintage and modern aesthetics with plush fabrics, leathers and cane bark together with Venetian-style pottery in a palette of greens, red, blues and pinks, inspired by gum trees.
