Former Brae chef replaces Enrico Tomelleri as 10 William St head chef
Sydney wine bar and restaurant 10 William St has an impressive list of alumni. It began with Dan Pepperell, who is now at Restaurant Hubert and Alberto's Lounge then Mike Eggert (Totti's) and Jemma Whiteman (Lankan Filling Station) and finally Enrico Tomelleri, who left at the end of 2018 on a research trip to Europe for Fratelli Paradiso's new venture, slated to open later this year.
Now Trisha Greentree, who comes from Dan Hunter's Brae in regional Victoria, has taken over the kitchen, officially heading the kitchen since March 1.
Greentree, who is originally from Sydney and has dined at 10 William Street many times has turned the menu around, making it her own. The new menu will focus heavily on local produce, changing every day with what the farmers bring in – something that was ingrained in her during her time at Brae, which grows much of its own produce. She also plans to accommodate for Sydney's humid climate with plenty of light, raw and cold dishes.
The team posted to Instagram: “Trisha’s menus are dictated by the best ingredients our farmers and suppliers have available in that moment, her relationship with them integral to her cooking.”
The pretzel with whipped bottarga and the tiramisu will remain unchanged, and the menu will still feature three daily pastas.
