Byron Bay Cookies celebrates Christine Manfield collaboration with Sydney dessert pop up

Byron Bay Cookies in collaboration with brand ambassador Christine Manfield is partnering up with Potts Point's Bistro Rex to celebrate the release its new ginger spice cream cookie in September.

The dessert pop up will offer diners a sneak peak to the new cookie flavour which combines ginger biscuits and nutmeg spiced fruit mince cream.

And the treat on the dessert pop up menu is Christine’s pear and ginger spice crumble, crafted in collaboration with Bistro Rex's chefs Jo Ward and Michelle Powell.

The dessert combines layers of ginger poached pears, fruit mince and lemon cream, with a crumble mix using Byron Bay Cookies' ginger spice biscuits. It will be available at Bistro Rex until Saturday August 26.

Manfield says, "I had a lot of fun experimenting with the flavours and textures of this cookie to develop something Byron Bay Cookies hadn’t done before.

"I’m pleased to be working with Jo and Michelle from Bistro Rex to bring to life such a delicious collaboration.”

It's also for a good cause. A portion of the proceeds from each dessert sold will be donated to Ovarian Cancer Australia.

Byron Bay Cookies by Christine Manfield's ginger spice cream cookie will be available from Friday September 1 in David Jones and online at cookie.com.au.
